History: Blue corn has been traditionally grown and used as a staple crop in diets for centuries by the peoples of the Southwest. It continues to be an important part of the diet for the Native people. Until recently, they would hand grind their corn with a grinding stone. It is used in stews, corn mush, a variety of breads, and pancakes. Blue Corn is a variety of Indian corn that has a blue kernel, and coarse when ground. It is also a corn variety that is harder to grow. It produces a lower yield than other types of corn and its stalks tend to fall over in the fields. Despite these difficulties, Blue Corn is at the top of the list for its flavor. The taste is sweet and nutty.
