History of Blue Corn: Blue corn has been traditionally grown and used as a staple crop in diets for centuries by the peoples of the Southwest. It continues to be an important part of the diet for the Native people today. Until recently, the Native Americans would hand-grind their corn with a grinding stone. They use the blue corn in stews, corn mush, a variety of breads, and pancakes.  The pancakes are enjoyed as a meal or snack any time of the day. Often, ash from a burnt cedar log is added to the blue corn meal to enhance the flavor and nutrition. Blue Corn is a variety of Indian corn that has a blue kernel and grown across the arid Southwestern deserts.

Ingredients: Whole grain blue cornmeal, enriched flour (bleached wheat flour, niacin, iron, thiamin mononitrate, ribofla-vin), sugar, baking powder (corn starch, bicarbonate of soda, sodium aluminum sulfate, acid phosphate of calcium), salt.
